Ingredients
- 1 tbsp oil
- ½ red onion, diced
- ½ sachet of Nando’s Hot PERi-PERi rub
- ½ can chopped tomatoes
- 1 tsp salted butter
- 400g king prawns
- 1 tbsp Nando’s PERi-PERi Sauce of your choice
- ½ a fresh lime
- Handful of fresh coriander
To serve
- Serve with spicy rice.
Method
- Fry the red onion in the oil until it turns golden brown. Then add the PERi-PERi Rub and fry until the spices become fragrant.
- Add the chopped tomatoes to the pan and let it all simmer until the tomatoes break down and the oil separates.
- Add the butter to the sauce, followed by the prawns once it’s simmering. Cook them on high heat for 4-5 minutes each side.
- Plate up and drizzle with your favourite Nando’s PERi-PERi Sauce.
- Finish off with a squeeze of lime and some fresh coriander. Serve with spicy rice.
