PERi-PERi Leftovers Pie

Make sad sandwiches a thing of the past. Take that turkey, your leftover veg and a bottle of PERi-PERi and let’s get this casserole started.

Ingredients

20ml PERi-PERi sauce (choose your flavour)
250g leftover roasted root vegetables
200g leftover cooked turkey, shredded
300ml leftover gravy
3 slices of white bread, crusts off
40g melted butter
10g grated parmesan
Small handful of chopped parsley

Method

Step 1

Preheat oven to 200°c. Chop up leftover vegetables and place into a casserole dish. Top with shredded turkey

Step 2

Mix gravy with PERi-PERi sauce and pour over turkey, cover dish with foil and cook for 30 mins.

Step 3

Tear up sliced bread into bite-sized pieces. Pour melted butter over and mix.

Step 4

Remove dish from the oven, remove foil then top with buttered bread. Sprinkle with parmesan and return to the oven for 15 minutes (until golden brown and crispy). Remove from oven, finish with chopped parsley and dive in!
